Zoodle Alfredo

You can please everyone with this dish.

I wanted zoodles. The kids wanted pasta. I combined the two, and it was delicious! I only used two servings of pasta in this dish, and it was plenty for four of us to eat (my three year old was in a mood). By adding the zoodles to the pasta, we really didn't feel like we were missing out on anything, which was really satisfying. For some, the broccoli may be a little overkill on the vegetables, but we enjoyed it. I didn't have any meat in this dish; however, you can definitely add shrimp or chicken to this. Feel free to change up the vegetables too! I used my Pampered Chef Veggie Spiralizer, which creates the prettiest ribbons out of these zucchini. However, if you don't have a tool like this in your kitchen, you can almost always find zucchini prepared as noodles in the produce section or even in the frozen section. If you buy them frozen, be sure to follow the instructions on the package.



Ingredients

  • 3 zucchini (cut into noodles)

  • 1-2 tbsp olive oil

  • 1 sweet onion (chopped)

  • 1-2 garlic cloves (chopped)

  • 1 cup broccoli florets

  • 1/2 cup cherry tomatoes (quartered)

  • 2 tbsp unsalted butter

  • 1 cup half & half

  • 1/4 cup grated parmesan cheese

  • 2 servings fettuccine pasta (optional)

  • salt and pepper to taste

Directions


Step 1

Heat the olive oil in a skillet over low to medium heat. Add the onion and garlic and cook until fragrant. Add the zoodles and broccoli (my broccoli was precooked from the night before; if you are using raw, you may want to heat in the microwave for about 5 minutes before adding to the skillet). Season with salt and pepper, stir and cook until the zucchini is mostly cooked through. Remove from heat.


Step 2

Cook the pasta (if using) according to box instructions. Meanwhile, heat the butter and half and half over medium heat in a small pot. Once the butter has melted, add the parmesan and stir until well combined and the sauce begins to thicken. Add the sauce to the zoodles. Drain the pasta and add to the zoodles (if using). Stir until all is combined. Top with fresh chopped tomatoes.
