Tuna & Avocado Lettuce Wraps

So much more filling than I'd expected!

I ran out of mayo and wanted to make tuna salad... I've never been more happy to not have mayo in the fridge! This was such a pleasant surprise of flavors, and I know that I will be making this salad throughout the summer. Think of guacamole with a burst of summer flavors when making this mix!

I was so full after dinner too, which was a huge bonus. The third serving was leftover in the fridge and will be ready to go on top of a salad, in a sandwich or in a wrap tomorrow or the next day. Thank goodness for leftovers!


Tuna & Avocado Lettuce Wraps


Ingredients

  • 2 cans of tuna (in water)

  • 1/2 red onion (chopped)

  • 1/2 cup cherry tomatoes (halved)

  • 1 lime (for juice)

  • 1 tbsp avocado oil

  • 1/4 cup cilantro

  • 2 mini avocados

  • 1 mini cucumber (chopped)

  • 3 outer leaves of romaine lettuce

  • *Optional: add tortilla chips on the side!

Instructions

  1. Mix all ingredients together until well combined and serve on romaine lettuce leaves!
