Strawberry Protein Muffins

Even my kids loved these!

These were so easy to make and delicious every morning for breakfast. I love having something simple like this to just grab and go for the busy mornings when I drop off the kids and head to the gym to teach a class. If you make these on a Sunday afternoon or evening, you can keep them in an airtight container on the counter until Wednesday or Thursday. You could even freeze some for later use (up to 3 months).

For me, the best part about these muffins is that my boys loved them too. However, it's a bonus that these have a little extra protein in them, which will help in keeping you full longer. It's perfect for a light breakfast before a workout. If you have kids, it's worth a try; if they don't like them, there's more for you to enjoy!
