Breakfast For Dinner: English Muffins

A simple dinner that turns into a meal prep!

We love breakfast for dinner. This go around was English muffins, and it certainly didn't disappoint. With so much fat-filled flavor, these were extremely filling and satisfying. The best part about this recipe is you can easily turn it into a meal prep for the next morning or two. If you make one sandwich, it's easy enough to make a second or a third, etc. All you have to do is wrap the extra sandwiches in tin foil and store in the fridge overnight. The next morning, unwrap the sandwich, place it on a microwave-safe place and heat in the microwave for 20-30 seconds!


Breakfast For Dinner: English Muffins


Ingredients

  • 1/2 tbsp olive oil

  • 1 egg

  • salt & pepper to taste

  • 1 english muffin

  • 1-2 tomato slices

  • 1/2 mini avocado

  • 1/4 cup arugula

Directions

  1. Fry your egg in the olive oil to your liking and assemble your sandwich!
