Egg Roll in a Bowl

Always a crowd pleaser!

This recipe never disappoints, and it can be so versatile. I used ground beef, but you could easily change it to ground turkey or chicken. I change out the vegetables in this dish occasionally too. Obviously, I always use cabbage, but the brussel sprouts could be swapped for another vegetable without missing much on flavor or texture. We just love brussel sprouts, I buy them almost every week even if I don't have a plan for them yet. Somehow they make their way into a meal one way or another!

You can save some time by planning out your meals with the same meat two or three nights in a row!

I used leftover ground beef for convenience in this dish. You can save some time by planning out your meals with the same meat two or three nights in a row! For example, plan to have hamburgers one night (with a whole wheat bun, without a bun or make it a burger salad). Grill enough hamburgers for that night, and you can simply brown whatever meat that is leftover. I do this and keep it unseasoned so that it won't alter the flavor of the next dish. With this recipe, you get four servings, which means leftovers for me because our kids can be pretty picky. I'm not mad about it though because the leftovers are even better than the original. Triple win: you have dinner planned three nights in a row if you plan accordingly.


Egg Roll in a Bowl


Ingredients

  • 3 tbsp avocado oil

  • 1 small head of cabbage (about 4 cups shredded)

  • 2 whole carrots (shaved)

  • 2 cups brussel sprouts (halved)

  • 2 eggs

  • 1 lb ground beef (I had 2 lbs originally but used the rest in other meals)

  • 2 tbsp rice vinegar

  • 2 tbsp liquid aminos

  • Everything Bagel Seasoning to taste

Instructions

  1. Heat oil in skillet over medium heat.

  2. Add cabbage, carrots, and brussel sprouts and cook until tender.

  3. Push all of the vegetables to one half of the skillet and add the eggs to the other side. Scramble the eggs and mix in with the vegetables.

  4. Add the cooked ground beef to the mix and cook until heated through (I taste test).

  5. Pour the rice vinegar, liquid aminos and seasoning (if using) over the dish and mix.

  6. Cook for another 3-5 minutes to make sure ingredients has time to mix flavors. Enjoy!
