A little twist on a yummy taco!
Usually, street corn is made with mayonnaise, but I wanted to switch it up while keeping it creamy, which is why I chose goat cheese and lite sour cream as a replacement. I can say I'm definitely pleased with the switch!
My father-in-law was in town when I made these. I got a good head nod and a thumbs up from him and my husband, which is always a compliment. These were super easy, quick and satisfying. I highly recommend these as a good rotation for your weekly Taco Tuesday! I know we will be making these again soon.
Ingredients
1 15oz can of corn (drained and rinsed)
juice from 2 limes
1-2 tbsp chili powder
1/4 cup cilantro (plus more for topping)
1/4 cup green onion slices (plus more for topping)
3oz plain goat cheese
1/2 cup lite sour cream
2 grilled chicken breasts (~2 cups chopped)
8 corn tortilla shells
Directions
Mix the corn through sour cream together.
Heat in microwave for two minutes and stir.
Make your tacos and top with any extra cilantro and green onion!
