Sweet Potato Basil Bowl

One skillet dinner!

This is a very easy dish that doesn't require much prep or cook time, and there's minimal dishes involved, which means not much clean up after dinner. The sweet and salty mixture with the topping of fresh basil is absolutely mouth-watering. You cannot go wrong with this dish.


Ingredients

  • 1 lb ground turkey

  • 1/2 tbsp onion powder

  • 1/2 tbsp garlic powder

  • 1 tbsp butter

  • 2 sweet potatoes (cubed)

  • 1 sweet onion (diced)

  • 1 garlic clove (sliced)

  • 1/3 cup water

  • 2 tbsp lemon juice

  • 1 tbsp maple syrup

  • fresh basil to taste

  • optional: plain Greek yogurt for topping

Directions


Step 1

Brown the ground turkey while seasoning with onion and garlic powder. Set aside.


Step 2

In the same skillet, melt the butter over low-medium heat. Add the sweet potato, onion and garlic to the skillet. Cook for 3-5 minutes.


Step 3

Add the water, lemon juice and maple syrup. Stir until well combined and allow to cook until the sweet potatoes are soft. Add extra water if necessary until everything is fully cooked.


Step 4

Add the ground turkey back to the skillet, stir and top with fresh basil. I topped mine with a little plain Greek yogurt on top.
