Strawberry Whipped Feta Dip

Impress your crew with this one!

This was such a great dip, especially with the fresh homemade sourdough from my mom. I could easily whip this up (pun intended) for a get together over the weekend, and it would surely impress everyone there, no doubt. Very flavorful with a blend of sweet, tart and salty. I love basil; so I put it in the dip itself and on top. Feel free to take out one or both for yours, if you aren't a big fan.


I stored this in the fridge and simply reheated whatever portion I had in the microwave. I used some of the leftovers on top of chicken and on a sandwich in place of my normal cheese and/or spread.


Ingredients

  • 1lb strawberries (rinsed and hulled)

  • 2-3 tbsp balsamic vinegar

  • 8oz feta block

  • 1/3 cup plain nonfat greek yogurt

  • 1 tbsp olive oil

  • fresh basil to taste

Directions

  1. Place all strawberries in a oven safe dish and drizzle with balsamic.

  2. Roast at 350 degrees for 5-10 minutes (up to you on how cooked you want them).

  3. Meanwhile, blend the feta, greek yogurt and olive oil until well combined (should be thick and "whipped" looking as you can see in the video).

  4. Add basil to the blender, if you choose (you can simply use the basil on top if you don't want it in the dip itself).

  5. Add the strawberries and juices to the blender.

  6. Give it a quick blend for a chunky dip or blend longer for a thinner dip. Serve right away with some good toasted bread!
