Spinach and Pasta Bake

A filling recipe for the entire family!

This is the adult mac and cheese with veggies right here! Honestly, my kids thoroughly enjoyed this as well. My picky eater ended up eating three bowls himself, which is so unusual I plan on making this again very soon! Quick tip on the frozen spinach: make sure you completely thaw it out and drain the excess liquid. Once you've drained it, you can gently ring it out with a paper towel.




Spinach & Pasta Bake


Ingredients

  • 6 servings of pasta

  • 24oz canned whole tomatoes (don't drain)

  • fresh basil to taste

  • Mrs. Dash Table Blend Seasoning to taste

  • 16oz frozen spinach (thawed and drained of juice/water)

  • 16oz 2% fat cottage cheese

  • 1 cup mozzarella

Directions

  1. Cook pasta al dente and set aside.

  2. Pour tomatoes, basil and seasoning into a pot and crush until the sauce is to your liking.

  3. Mix the spinach with the cottage cheese.

  4. Pour the pasta into a baking dish, layer the cottage cheese on top followed by the tomato sauce.

  5. Cover with aluminum foil and bake at 375 for 20 minutes.

  6. Take out and top with the mozzarella.

  7. Bake uncovered for an additional 15 minutes (until cheese is melted and/or lightly burnt on top). Let the dish sit for a few minutes, stir to mix, and serve!
