Shrimp Cobb Salad

Perfectly light and filling...

Ingredients

  • 2 cups romaine lettuce (chopped)

  • 1 slice of bacon (crumbled)

  • 10 small-medium shrimp

  • 1 campari tomato (diced)

  • 1 mini avocado (cubed or sliced)

  • 1 boiled egg (quartered)

  • 1/4 cup feta cheese

  • green onion to taste (chopped)

Directions

  1. Cook the shrimp to your liking and assemble the salad. I used a house vinaigrette dressing, but you can use whatever you like. This is enough for one serving. Simply double or triple for more servings for the family!
