You can't go wrong with Mexican food!
We love eating Mexican food. I almost always have corn tortilla shells in the pantry ready to go for fajitas. Any leftovers are great on top of a salad as well!
Ingredients
1 lb steak strips
1 tbsp olive oil
1 tbsp chili powder
1 tsp paprika
salt & pepper to taste
1 yellow bell pepper (cut in strips)
1 orange bell pepper (cut in strips)
1 red bell pepper (cut in strips)
1 white onion (cut in strips)
Directions
Step 1
In a Zipolock bag, mix the steak with the olive oil and seasoning. Allow the steak to marinade while you cut up the vegetables.
Step 2
Lay the vegetables on one side of a baking sheet sprayed with cooking spray. Sprinkle salt and pepper on the vegetables and mix to combine.
Step 3
Leave the vegetables on one side of the baking sheet and pour the steak on the other half. Bake at 400 degrees for 7 minutes. Mix all of the vegetables and steak together and bake for an additional 7 minutes.
