Salmon Patties with Arugula Salad

Dress up your salmon patties!


My kids love fish just as much as I do. I wanted to switch things up by making them some salmon patties, and they were a hit! I hadn't made them in so long but had leftover homemade bread that needed to be used. So, I made homemade bread crumbs from it for this recipe. You could do the same by simply toasting your bread and blending it up in the blender. You can also substitute the packets of salmon with any leftover salmon you may have from a previous night's dinner. Just chop the leftovers up and toss it in the bowl!


Ingredients


  • 2 3oz packets of salmon (I used Safe Catch)

  • 1 egg 1/3 cup bread crumbs

  • 1 tbsp Old Bay Seasoning

  • 1 tbsp olive oil

  • 2 cups arugula

  • 2oz feta cheese


Directions


Step 1

In a bowl, mix the salmon, egg, bread crumbs and seasoning until well combined. Using your hands, make four patties.


Step 2

Heat the olive oil in a skillet and cook the patties for 2-3 minutes per side (time may vary).


Step 3

Evenly distribute the arugula onto four plates and top with the salmon patties. Evenly sprinkle the feta cheese on each plate. Optional: drizzle a vinaigrette dressing on top of each salmon patty (I used an apple and thyme vinaigrette).
