Salami & Goat Cheese Frittata

Two meals made in one.

I love making breakfast for dinner, and this is one of my favorite ways of doing it. The goat cheese is absolutely key in this dish. If you can find the garlic and herb goat cheese, grab it. If not, no big deal, but the garlic and herb really sets this dish perfectly. I made salami and turkey sandwiches a week or so ago and have been trying to use up what was left of it, and this was a convenient way to use some up. It definitely worked out in my favor. A salty and savory dish for dinner, and the leftovers are perfect the next morning for breakfast!


Ingredients

  • 6 eggs

  • 2 tbsp half and half

  • 1 white onion (thinly sliced)

  • 4oz garlic & herb goat cheese

  • 6 slices salami

Directions

  1. Crack eggs, pour the half and half in the eggs and mix.

  2. Add onion and goat cheese to the eggs.

  3. Top with salami.

  4. Bake at 350 degrees for 25-30 minutes.
