A must for your next party!
I made this without knowing just how delicious it would be. I had it as a side, and I put it on top of my salad. Both were so good and a great way to enhance my meals. It's so colorful and so flavorful; I am positive it will go well with whatever you choose!
Ingredients
4 tbsp olive oil
2 tbsp apple cider vinegar
2 tbsp lime juice
salt & pepper to taste
1 tbsp dill
1 English cucumber (chopped)
1 red bell pepper (chopped)
1 yellow bell pepper (chopped)
1 cup grape tomatoes (halved or quartered)
1 red onion (chopped)
1/3 cup black olives (sliced)
fresh parsley to taste (chopped)
4oz feta cheese crumbles
Directions
Step 1
First, mix all of the dressing ingredients (olive oil through dill) in a small bowl. Set aside.
Step 2
Then, prepare all of the vegetables and toss in a large bowl. Drizzle the dressing on top and mix until well combined. Serve chilled.
