Pistachio Chicken Salad

Refreshing twist on a classic!

I really enjoyed this twist on chicken salad. It's a nice change up for the classic dish. I loved the crunch of the cucumber and pistachios along with the sweetness of the raisins. Switching out the typical mayo with plain Greek yogurt is always delicious for me. If you haven't made that switch before and like the tang of plain Greek yogurt, you will really enjoy this. I had one serving spread over two romaine leaves one day, another on top of a spring mix salad and the last serving was scooped up with whole wheat crackers. All three ways were tasty and filling. I added a little more to the salad (some crumbled goat cheese and vinaigrette), which was a nice change up since I was having it three days in a row. Some people don't like having the same thing for lunch multiple days in a row, but I truly don't mind it. Plus, this gave me just enough variety to make it interesting.


Ingredients

  • 1/2 lb shredded chicken

  • 3-4 tbsp Dijon mustard

  • 1/3 cup pistachios (shelled)

  • 1/4 cup golden raisins

  • 1/2 English cucumber (skin removed, diced)

  • juice from 1/2 lemon

  • salt and pepper to taste

  • 1/2 cup plain Greek yogurt

Directions


Step 1

Mix all ingredients together until well combined. Serve with whole wheat crackers, on top of a salad or however you prefer!
