Simple, easy and delicious!
I like to keep a jar of basil pesto and different kinds of cheeses in the fridge. So to make this English muffin is pretty simple for me. You can easily customize this by added a tomato slice, a drizzle of balsamic or even a smear of hummus. I make something like this on the mornings that I have a little more time on my hands; however, it truly doesn't take much time to make it. I hope you make one for yourself with a big, hot cup of coffee.
Ingredients
1 whole wheat English muffin
1 egg
2 tbsp pesto
2 tbsp shredded parmesan cheese
Directions
Step 1
Toast your English muffin to your liking.
Step 2
Fry the egg by using cooking spray instead of oil or butter.
Step 3
Plate your English muffin with the egg in the middle. Spread the pesto on the top piece of bread and sprinkle parmesan on top of the egg. Enjoy!
