My new favorite combo!
We love energy bites over here. Between me, my husband, and our two older boys, they don't last long! They are just so perfect right before or after a workout for me, and I can easily store them in the boys' snack boxes for food on the go.
I switched up the flavor by adding coconut flakes to the mixture. You could easily roll each bite in the coconut flakes rather than mixing it in; however, I find that I over do it with coating the outside, which can add unnecessary and unwanted extra calories. With the exact amount added in the mixture, the calories are controlled. Make these one day out of the week and have snacks for days!
Ingredients
1 cup dry oats
1/2 cup peanut butter
1/4 cup unsweetened coconut flakes
1/4 cup maple syrup
Directions
Mix and chill in the fridge for 20-30 minutes.
Take out and round out 12 round bites.
Store in an airtight container in the fridge for the week!
