Another option for Santa!
This is your basic energy bite made into cookie form. I tried rolling it out with a pinwheel, but it worked best with me just using my hands. I simply flattened the mixture out as much as I could, pressed the cookie cutter down and lifted the "dough". When I lifted the cookie cutter up, I made sure to press down on the dough while doing so. Freeze in the freezer for 30 minutes and serve, or you can store in the fridge and eat as you like!
Ingredients
2 cups oatmeal
2 tbsp maple syrup
2 tbsp chia seeds
1/2 cup peanut butter
2 tbsp Lily's chocolate chips (stevia sweetened)
3-4oz unsweetened apple sauce
Directions
Step 1
Mix all ingredients together in a large bowl. Allow to chill in the fridge for 20-30 minutes.
Step 2
On a clean surface, roll out the mixture and press down evenly. I sectioned mine out to three different batches.
Step 3
Use a cookie cutter to cut out the shapes you would like! I used a small ginger bread man cookie cutter, which allowed me to make 20 small cookies.
