Mexican Shrimp Lettuce Boats

You can serve and please everyone with one dish!

This is so easy and quick to whip up any night of the week. You can please everyone by chopping enough lettuce for salads, reserving leaves for lettuce boats, and having tacos shells on hand for those who want tacos. I used all of the optional toppings because they just added extra flavor and texture for the lettuce boat.


Ingredients

  • 1 lb shrimp

  • 1 head of romaine lettuce

  • 1 tomato (chopped)

  • 1/2 cup cilantro (chopped)

  • 1 avocado (peeled, seed removed, cubed)

  • lime juice to taste

  • Tajin seasoning to taste

  • optional: black beans for topping

  • optional: jarred pickled red cabbage for topping

  • optional: taco shells




Directions


Step 1

Boil shrimp in a pot of water until cooked through.


Step 2

Find the best full leaves from the romaine head for the lettuce boats and set aside. Chop the rest of the lettuce and the rest of the vegetables.


Step 3

Peel the shrimp and season with lime juice and Tajin seasoning. Assemble your lettuce boat and/or tacos!
