Your new go-to party dip!
Not only was this great as a dip, but I loved it on my salads and in wraps too! This makes so much and is guaranteed to be a crowd pleaser. So be sure to save this one for the upcoming football season and all of the tailgates and football parties. I added the chickpeas in the end because I enjoy them, but they can be optional if you aren't a fan. My serving suggestion for this dip is plain pita chips, like Stacy's Simply Naked Pita Chips.
Mediterranean Party Dip
Ingredients
3 large pickling cucumbers (finely chopped)
1 large tomato (finely chopped)
1 large red onion (finely chopped)
1/3 cup whole kalamata olives (pitted and chopped)
2oz feta cheese
3 tbsp olive oil
juice from 2 lemons
salt to taste
1 can garbanzo beans (drained and rinsed)
Directions
Mix all together and enjoy! Chill in the fridge if not serving immediately.
