Mahi Mahi Tacos with Pineapple Salsa

Fresh and filling!

Fish tacos is always a good idea in our kitchen. Being that these are mahi mahi is just a plus for me. The pineapple salsa is fantastic and makes more than enough for these tacos. The leftovers were perfect on top of a salad and as a side dish. I hope you enjoy!


Ingredients


Pineapple Salsa:

  • 1 pineapple (cut into small chunks)

  • 4 mini sweet peppers (chopped)

  • 1 white onion (chopped)

  • 2-3 tbsp lime juice

  • garlic powder to taste

  • salt & pepper to taste

  • 1/2 cup cilantro (chopped)


Mahi Mahi:

  • 1 tbsp olive oil

  • 3 Mahi Mahi fillets

  • 3 tbsp lime juice

  • salt to taste

  • 6 Mission Zero Net Carb Original Tortilla Shells


Directions


Step 1

Mix the salsa ingredients together until well combined and chill while cooking the fish.


Step 2

On a medium hot skillet, drizzle the olive oil and cook the mahi mahi for 2-3 minutes per side (to your liking). While cooking the fish, drizzle with the lime juice and sprinkle with salt to your liking.


Step 3

Once cooked, cut the fish into chunks and serve on your tortilla shells topped with the pineapple salsa.
