You can feed everyone with this!
I saved a small serving of beans and 2 and a half sausages for the kids (I bought a pack of 5 sausages). The kids aren't really big fans of potatoes. I gave the older two some toast and the younger the beans. They all had fruit on the side. This just goes to show that you don't have to make two or three different meals for the entire family. I'm not catering to the kids. I'm catering to me and my husband and giving the kids an alternative that they enjoy.
Ingredients
2 baking potatoes (diced)
1 tomato (diced)
2 cloves of garlic (sliced)
1 onion (diced)
2 tbsp olive oil
3 Italian turkey sausages* (sliced)
1 can cannellini beans (drained and rinsed)
salt & pepper to taste
Directions
Step 1
Prepare all of the produce.
Step 2
Drizzle the olive oil onto a warm skillet and toss the garlic, onion and potatoes in and stir.
Step 3
After cooking the vegetables mostly through, add the sausage to one half of the skillet.
Step 4
Once the sausage is ready to flip, stir all of the vegetables with the sausage and add the beans.
Step 5
Once all of the sausage and vegetables are cooked all the way through, season with salt and pepper, mix until well combined and top with the tomatoes.
