Holiday Green Beans

Who needs green bean casserole?

Who says everything has to be a casserole during the holidays? You can easily double or triple the amount for this recipe to feed more people. It is simple, healthy ingredients that everyone will love. The crunch from the pecans and the sweetness from the cranberries makes this a perfect side dish for this holiday season. It's also festive. So, if someone gives you a hard time about bringing this to the family meal, tell them they need to get in the holiday spirit!


Ingredients

  • 2 tbsp olive oil

  • 1 garlic clove (thinly sliced)

  • 2-3 cups fresh green beans

  • about 1/2 cup of water

  • salt to taste

  • 1/3 cup pecan halves

  • 1/3 cup dried cranberries


Directions


Step 1

Over medium heat, sautee the green beans and garlic in the olive oil. Cook until the green beans are lightly browned.


Step 2

Add enough water to just cover the green beans and simmer until they are almost completely cooked through. Season with salt.


Step 3

Add the pecans and cranberries and cook for another 2-3 minutes.


Serves 3
