A sweet treat, an appetizer or an energy boost!
The boys and I came up with a new mixture for you to try, and we are most definitely pleased with the outcome. I wasn't sure how the texture would be without the added liquid. So, I added a little bit of water at a time as we blended the mixture. We based this recipe off of my Pumpkin Pie Energy Bites from my new cookbook (get yours here!). They came out like chocolate cookie dough, which is exactly what I was going for with this. I do have to note that I only pitted my dates. I didn't cut them up at all, but I should have before blending. After blending, I started to ball up each bite and noticed that one of the dates didn't get fully blended. So, I would advise chopping the dates up beforehand.
Ingredients
1/2 cup Nutella
1/4 cup cashews
1/4 cup pecans
3 dates (pitted and chopped)
2 cups oats
water as needed (I used about 1/3 cup)
Directions
Blend all of the ingredients together and add water as needed in order to create a cookie dough texture. Spoon out 12 servings and round each serving into a ball. Place in the freezer for 20 minutes and serve!
You can keep these in the freezer in individual bags so you can grab and go over the next few days too!
