Everyone will love this!
I made a whole chicken in the slow cooker on a Sunday. I gave the boys chicken for lunch and shredded the rest of it (about 2-2.5 cups) for this Guacamole Chicken Salad. What was leftover from the salad was put on two low carb wraps, which served as my lunch for the next two days. This was so simple to make, and it was very filling. It would be a fantastic dip for a party, or you could top your salad, sandwich or wrap.
Ingredients
2 cups shredded chicken
1/4 cup diced red onion
1/4 cup chopped green onions
1/2 cup grape tomatoes (halved)
1/3 cup chopped cilantro
lime juice to taste (I used roughly 4 tbsp)
salt and pepper to taste
2 avocados (seed removed/cut in chunks)
Directions
Step 1
Mix all ingredients together until well combined. Serve with tortilla chips as a party dip, on top of a bed of lettuce or in a wrap for lunch or dinner.
