So colorful and filling!
I love throwing everything into a bowl and giving it a good mix sometimes. The thing I really enjoyed about this bowl in particular is that some of the food was hot, and some of the food was cold. There were crunchy and creamy textures that blended so well, and the dressing just tops it all off. I used the house dressing I always make at home; however, a store bought house vinaigrette is acceptable too. This was a quick meal, which was my point in sharing with you all. Some convenience foods in your diet is completely fine. Notice how I only cut up the cucumber and radishes. I bought precut carrots. I used frozen edamame for easy heating, and I used the 90 second grains to save time and make it less complicated. You can make recipes healthy AND easy.
Ingredients
1 cup cooked green beans
1 frozen bag of shelled edamame
2 mini cucumbers (sliced)
4 medium radishes (sliced)
3/4 cup carrot sticks
salt & onion powder to taste
90 second seven grains
1 avocado (sliced)
1 grilled chicken breast (cut in bite sizes)
4-6 tbsp house vinaigrette
Directions
Step 1
Cook the green beans and edamame. All you need is one cup of green beans. So if you cook more, save the rest for another meal.
Step 2
Prep the vegetables by slicing the way you like. Season the edamame with salt and onion powder. Heat the 90 second seven grains and the grilled chicken (mine was leftovers).
Step 3
Evenly distribute all ingredients into two bowls. Top with vinaigrette.
