Adult mac and cheese!
This is a great way to feel like you are splurging. As long as you eat the appropriate portion size, there is absolutely nothing wrong with enjoying some good pasta, goat cheese and broccoli. Of course, you can jazz this up to your liking by adding some chicken or mushrooms or additional cheese. It's completely up to you. As long as you are eating the correct portion size, you can enjoy your pasta dishes!
Ingredients
1 broccoli crown (cut into small florets)
8oz medium pasta shells
4oz garlic & herb goat cheese
Directions
Step 1
Cook the pasta according to the instructions. Reserve 1-2 cups of the water from boiling the pasta. Drain the pasta and set aside.
Step 2
Heat the reserved pasta water in the same pot and add the broccoli. Stir and cook until just past tender.
Step 3
Add the pasta back to the pot. Add the goat cheese and cover with lid (allowing the cheese to melt). Uncover and and stir until well combined. Serve immediately and enjoy!
