Girly Game Day Food: Summer Time Bagel Bites

Summer Time Bagel Bites for the win!


With football season in full swing, I decided to reach out to all the football-loving moms like myself with a new recipe series: Girly Game Day Food. If you're a UGA fan, don't think I didn't consider calling this series "Gurley Game Day Food". These recipes are for the girls who wake up at the crack of dawn for an all day tailgate, that host numerous people in their homes all season long and that stay up late to see the last seconds tick away on the scoreboard. Now let's talk food.


This recipe can be treated as an appetizer or as a meal. If it's an early football game, sometimes it's fun to mix it up with a brunch menu. You can have mimosas, these bagel bites, a fruit bowl and maybe some sausage balls. Keep it simple. Brunch is always a crowd pleaser too. So, go get your brunch on, girl!


Summer Time Bagel Bites


Ingredients

  • 2 everything bagels (halved and toasted)

  • 3 tbsp light cream cheese

  • 8 thin slices of tomato

  • 6 slices of cucumber (quick pickling recipe below)*

  • 2 tbsp capers


Preparation


Step 1

If using, make the quick pickled cucumbers and allow to chill in the fridge for at least 30 minutes.


Step 2

Assemble the two bagels by splitting all of the ingredients up between the two. Cut the bagels into fourths and serve.


*To quick pickle sweet and salty cucumbers: slice an entire English cucumber and place the slices in a bowl. Sprinkle the slices with 1 tsp sugar and 1 tsp salt; pour about 1 cup of white distilled vinegar on top and mix. Allow the cucumbers to chill in the fridge for at least 30 minutes and then drain the juice.
