For the salad lovers in the crowd.
Yes, I am that person that shows up to a tailgate or a football party with a salad. I am the veggie tray queen, the fruit bowl maker and the salad bringer. If no one else eats it, it's their loss, and it's more for me. At least that's how I see it. However, I never have to worry about that because it always gets eaten. There's always compliments to either the salad or the dressing I make, and I'm always happy to bring it again and again. This particular salad has bacon on it as well; who doesn't love bacon?
Other salads I've brought are very similar to this one. I usually have a fruit, cheese, and nuts on a bed of lettuce. Sometimes I have croutons; other times I make a loaf of bread with an olive oil dip. Just because we are used to easy football finger-foods, it doesn't mean we have to continue eating this way while watching football. We can have an actual meal together, and we can start with a salad!
When we have football parties, we always include the kids. It makes for an interesting mess, for sure, but the kids have a blast (as you can see them "toasting" in the video below here). I grew up surrounded by football, I was a football cheerleader all through school, and my husband played football all through school. To say the least, our kids will likely grow up the same way we did. It will either make them love it or hate it. Either way, I try to make it fun for the kids by allowing them a space to play with play dough, do a small craft or play in the kids' rooms upstairs.
Ingredients
2 cups spring mix salad
5 cucumber slices
1/4 cup pecan halves
1/4 cup blueberries
1/4 cup feta cheese
1 slice bacon (crumbled)

Cook the bacon ahead of time for topping your salad.
Step 2
Assemble your salad!
