Fresh Parmesan & Lemon Linguine

Light yet flavorful!

This is so light yet flavorful. You can easily add some chicken or shrimp to this to make it go a little further. I simply paired this with a small Greek style salad on the side and was very content.


Ingredients

  • 2 garlic cloves (chopped)

  • 2 tbsp olive oil

  • 1/2 cup dry white wine (I used pinot grigio)

  • 1 cup cherry tomatoes (halved)

  • Juice from 1 lemon

  • 1/3 cup shaved parmesan cheese

  • 6oz linguine pasta

  • Fresh basil to taste (for topping)

Directions


Step 1

Boil the linguine until al dente.


Step 2

Meanwhile, heat the oil over medium heat and cook garlic until fragrant. Add the white wine, tomatoes and lemon.


Step 3

Cook down the tomatoes for 2-3 minutes. Add the cheese and stir while it melts to ensure that there aren't any clumps.


Step 4

Once the cheese has melted, add the cooked pasta, stir until well combined. Top with fresh basil.
