Egg & Potato Bake

Breakfast for three days!

This was a perfect breakfast the first day, but it was even better the second day. Even my husband gave me a compliment the next day! Enjoy this for breakfast, brunch or even dinner with a side of mixed fruit!


Egg & Potato Bake


Ingredients

  • 1 potato (diced)

  • 1 yellow onion (diced)

  • salt and pepper to taste

  • 1 cup spinach & arugula

  • 1 tomato (diced)

  • 1/2 cup pepper jack cheese

  • 3 eggs

Directions

  1. Preheat oven to 350 degrees.

  2. Spray a baking sheet with cooking spray and lay out your potato and onion evenly on sheet.

  3. Sprinkle salt and pepper to your liking.

  4. Bake for 10 minutes.

  5. Spray a bread pan with cooking spray and layer your ingredients in order: press the potatoes and onions down to make first layer, top with spinach and arugula, tomato, cheese and eggs.

  6. Bake in the oven until the eggs are cooked to your liking. I baked for 15 minutes.
