Egg Breakfast Fiesta

Spice up your morning!


We almost always have salsa in our fridge. So, this is a very simple go to option for me. It doesn't have to be chili beans; however, the chili beans sure to bring some flavor! The avocados that I use come from Aldi because they usually have a bag of fresh mini avocados that are single serving sized. I buy them when I feel like I am in the mood to have avocados for multiple meals throughout the week because we all know how quickly they can go from not ripe to ripe to total mush in a matter of days. I hope you enjoy this little fiesta meal in the near future!


Ingredients


  • 1 tbsp olive oil

  • 1/4 cup mushrooms (sliced)

  • salt & pepper to taste

  • 2 eggs

  • 1/4 cup chili beans

  • 1/2 mini avocado

  • 2 tbsp salsa


Directions


Step 1

In a small pan, heat the olive oil over medium heat. Add the mushrooms and cook until mostly cooked through. Season with salt and pepper to your liking.


Step 2

Scramble the two eggs with the mushrooms until eggs are almost completely cooked through. Sprinkle the chili beans on top and stir all together so they get warmed up too.


Step 3

Plate the egg mixture and top with avocado slices and salsa.
