Easy Green Salad w/ Capers

The crunch of this salad is addicting!

The simplicity of this salad may just be the reason it's so addicting. Feel free to add any meat to this, but I have added the hemp seeds for protein purposes, which I completely spaced and forgot to put on during the video (oops). When I have this for lunch and don't want to prepare a meat to go on top, I simply add either kidney beans or garbanzo beans for additional protein. I used this salad as just a side salad tonight because we had chicken, potatoes and collards (pictured below) for dinner.


I used oil and vinegar from Town Square Olive Oil & Balsamic Vinegars because we just went there last weekend for a wine, oil and vinegar tasting for Whole Health with Lana's third anniversary. I used the Cucumber and Lemon Balsamic Vinegar and the Artichoke and Garlic Olive Oil to dress this salad. However, you can use any olive oil and white balsamic vinegar you have available.

Ingredients

  • 1 head of romaine lettuce (chopped)

  • 1 mini cucumber (sliced)

  • 2oz feta cheese crumbles

  • 2 tbsp capers

  • 2 tbsp hemp seeds

  • 1 tbsp dill

  • 2 tbsp olive oil

  • 2 tbsp white balsamic vinegar


Directions


Step 1

Chop lettuce and cucumbers and place in a large bowl. Top with the rest of the ingredients and toss with the oil and vinegar.
