Simply refreshing!
If you are looking for a new way to enjoy a delicious summer watermelon, give this a try. This is simply refreshing, and it is a great addition to any summer grill out. I made a watermelon salad last year with mint, feta and red onion, which is also tasty. This was a nice change up with the cucumber this time. I highly recommend you try this before summer is over!
Ingredients
1 small or medium cucumber (peeled and sliced)
1.5-2 cups watermelon (cubed, small)
fresh basil to taste (hand torn)
salt to taste
1 tbsp olive oil
1-2 tbsp balsamic vinegar
Directions
Step 1
Mix all ingredients together in a bowl and chill. Serve cold.
