The perfect crunch!
Sometimes it's nice to just stick with the simplest option. I used lite cream cheese for this to save a little on calories. I would suggest making these ahead and keeping them in the fridge until you're ready to serve. When you make them, allow the cream cheese to sit out for a few minutes so it softens a bit, which makes for easier spreading. I used everything bagel seasoning; however, simple salt and pepper would do just fine as well. I put grape tomatoes on top of a few, which was delicious. You could mix it up with other toppings as well. Suggested toppings: capers, olive slices or fresh chopped dill.
Ingredients
1 cucumber (sliced into 12 slices)
6 tbsp lite cream cheese
Everything bagel seasoning to taste
optional: 6 grape tomatoes (halved)
Preparation
Step 1
Spread 1/2 tbsp of the lite cream cheese onto each cucumber slice and sprinkle with seasoning. If using, top with the tomato halves (or other topping of choice).
