I could eat this every week, no problem.
If you live close to Covington, Ga, you may have heard of and/or eaten at Mystic Grill (especially if you are a Vampire Diaries fan). I made this salad without even thinking of the Mystic Salad; however, it ended up turning out very similar, which is probably why I loved it so much. If you ever go to Mystic Grill, I highly recommend the Mystic Salad with the protein of your choice on top. The difference with mine is there are apple slices, my pecans are not candied, and I'm not entirely sure how they make their dressing. Either way, ordering it out or making it at home, this salad is super hard to beat!
Ingredients
4 cups spring mix salad
1/2 cup crumbled feta cheese
1/4 cup chopped pecans
1/4 cup dried cranberries
1/2 red onion (thinly sliced)
1 small granny smith apple (thinly sliced)
3 tbsp apple cider vinegar
2 tbsp olive oil
1 tbsp maple syrup
Salad dressing herb blend to taste (I used probably 1 tbsp)
Directions
Layer up your salad from spring mix to the apple.
Mix together the vinegar, oil, maple syrup and herbs.
Stir the dressing and pour over the salad. Serve immediately.
