A great side dish to add to the mix!
This is a great way to mix up your traditional side dishes. I know that we are used to having a cucumber salad with vinegar in the south, but this is a nice change up and a great way to really enjoy the combination of flavors. I paired this with some baked chicken and was perfectly content for lunch!
Ingredients
1/2 cucumber (peeled and chopped)
2oz feta cheese
1 tbsp oregano (chopped)
10 green olives (sliced)
1 tomato (chopped)
1/2 yellow onion (chopped)
salt & pepper to taste
4-5 tbsp olive oil
optional: 2 tbsp white vinegar
Preparation
Step 1
Mix all ingredients together and serve chilled!
