Chocolate Pecan Dates

Perfect sweet tooth fix!

So, I overestimated the amount of pecans and chocolate that I would need, but it was worth it because I made some leftover chocolate pecans! I love making freezer trail mix bark for a quick salty-sweet bite; so that's what I did with the leftovers. These chocolate pecan dates would be great for a small get together. Keep in mind that the chocolate will melt in the heat. So, best to keep these indoors. This makes 10 bites; you can easily add more dates to use up the chocolate and pecans if you need more bites for more people.


Ingredients

  • 15 pecan halves (chopped) *(I used 1/4 cup so I made leftover chocolate pecans)

  • 1/3 cup dark chocolate chips (again, there will be leftover chocolate)

  • 5 dates (pitted and halved)


Directions

  1. Roast the pecans in the oven at 350 degrees for about 5 minutes.

  2. Microwave half of the chocolate chips in a bowl in 30 second intervals until completely melted.

  3. Add the rest of the chocolate and stir until all chocolate is melted and smooth.

  4. Drizzle each date half with chocolate and top with 3 or 4 pecans pieces.

  5. Let them sit at room temperature to let the chocolate harden.

  6. Store in the fridge in an airtight container.

*For leftover pecans and chocolate: stir together and lay flat on tin foil. Let it harden and then store in an airtight container in the freezer. Break off little bite sizes for when you need a quick sweet treat. You can allow yourself to have chocolate!
