Simple and filling.
This is so easy to whip up for lunch. You can even make this ahead for lunch the next day. It's a combination of some of my favorite ingredients and the dressing I've been putting on everything lately. I hope you enjoy this chilled power bowl on a hot summer day!
Ingredients
1/2 cup chickpeas
1 tbsp pepitas
1 tbsp hemp seeds
1/2 cucumber (peeled and diced)
1 tbsp olive oil
1/2 tbsp white balsamic vinegar
1/2 tbsp apple cider vinegar
1/2 tbsp Dijon mustard
Directions
Step 1
Mix the chickpeas, pepitas, hemp seeds and cucumber in a bowl.
Step 2
In a separate bowl, mix the olive oil, white balsamic vinegar, apple cider vinegar and Dijon mustard until well combined to make the dressing.
Step 3
Pour the dressing over the chickpea bowl and mix all together. Serve chilled!
