Make this on a cold day this winter!
My in-laws were in town when I made this, and everyone at the table gave me a compliment. It was just as good the next day too. I hope you enjoy this on a cold day this winter.
Ingredients
1 tbsp olive oil
4 garlic cloves (minced)
1 yellow onion (chopped)
2 celery stalks (chopped)
4 cups chicken stock
3-4 tbsp lemon juice
2 cups shredded chicken
1/2 can of diced carrots (drained and rinsed)
3/4 cup dry linguine pasta (torn into 1 inch bites)
pepper to taste
Directions
Heat the olive oil in a large pot over medium heat. Add the garlic, onion and celery and cook for about 3 to 5 minutes; stirring occasionally.
Add the chicken stock and lemon juice and bring to a boil. Add the pasta and reduce heat to a simmer.
Add the chicken, carrots and pepper. Stir and cook for about 10 minutes.
Cover and turn off heat. Let it sit for about 10 or 15 minutes. The noodles will continue to cook during this time.
