Perfectly filling and simple to make!
There's something about a good pasta dish that makes for a good family dinner. If you're looking for a filling meal full of flavor, this is it. I must say the lemon juice/zest and the fresh basil are crucial for the flavor in this dish. Fresh is the key word here.
Ingredients
4 servings of whole wheat thin spaghetti
2 tbsp olive oil
2 cups sliced mushrooms
1 yellow onion (chopped)
3 garlic cloves (minced)
zest and juice from 1 lemon (optional: extra lemon juice)
1 chicken breast (grilled) (6oz)
1/4 cup shredded parmesan cheese
2 tbsp butter (melted)
1/4 cup half n half
fresh basil (to taste)
Directions
Cook pasta according to instructions and set aside.
Heat olive oil in skillet over medium heat and sauté the mushrooms, onion, and garlic.
Add the lemon zest and juice once the vegetables are mostly cooked down.
Add cooked chicken to the skillet along with the parmesan cheese and pasta.
Give it a good mix and set aside while you make the small batch of sauce.
Melt the butter, add the half n half and stir.
After the sauce is completely combined, add it to the pasta and mix well.
Top with basil to your liking and let the pasta sit for a few minutes. Serve and enjoy!
