Caprese Sandwiches

Such an easy meal to put together.


About the Recipe

This is such a quick dinner night option; it makes it so appealing for those busy week nights. You can easily adjust this for the kids by making them traditional grilled cheeses or giving them cheese slices with toast and veggies and/or fruit on the side. There is absolutely nothing wrong with that!


Ingredients


  • 2 slices of artisan bread

  • 1 tbsp basil pesto

  • 1 large slice of tomato

  • 1oz fresh mozzarella cheese

  • 3-4 fresh basil leaves

  • 1/4 cup arugula


Preparation


Step 1

Scoop the pesto onto one slice of the bread.


Step 2

Layer the tomato and mozzarella onto the other. Broil on low in the oven until the cheese melts.


Step 3

Top one side with the basil and arugula. Assemble the sandwich and enjoy!
