An adult twist on a kids dish!
I really enjoyed this dish, and so did my 5 year old, which made me proud. He is so hard to get to try new things. My 3 year old wasn't a huge fan. You win some and lose some. However, my 1 year old could have lived off of this, if I'm being honest. That child loves some butternut squash. So he was all about it. I had some of the leftovers the next day with some grilled chicken mixed in, and it was a great, filling meal for me. It's a great way to introduce new foods to your kids (or be sneaky and don't tell them). It's also a great way for adults to get in some vegetables and a lovely comfort food at the same time. Remember, everything in moderation. You can have pasta and still lose weight/be healthy!
Ingredients
3 cups conchiglie (small shell pasta)
1 butternut squash (cut in small chunks)
1 cup of milk (I used whole milk)
1 cup shredded cheese
1 tbsp unsalted butter
Directions
Step 1 Boil the squash for about 10 minutes (taste test to make sure it is completely cooked through). Spoon the squash into a blender (reserving the water in the pot). Boil the pasta in the reserved water. Step 2 Meanwhile, blend the squash with the butter, milk and cheese until a sauce is formed. Drain the pasta, pour the sauce all over and mix until well combined. Serves 5 Nutrition Facts Calories: 370 Carbs: 52g Fat: 12g Protein: 14g
