Extremely filling bunless burgers!
These were absolutely delicious. The kids didn't want goat cheese on their burgers, but they split the sweet potato fries and okra with us just fine. The avocado and onion on top is super tasty as well. For some odd reason, my almost three year old loves onions and has no problem eating them. The avocado slices are kind of a hit or miss with the kids, but I like to give them the opportunity to try them. I hope you enjoy these as much as we did!
Burgers with Sweet Potato Fries & Okra
Ingredients
1 lb ground turkey (made into 4 patties)
3 tbsp olive oil
Burger seasoning (mine is Aldi's "Amazing Burger")
2 medium sweet potatoes (cut like fries, skin on)
Mrs. Dash Table Blend
1 lb fresh okra
2oz goat cheese
1/2 yellow onion (cut in rings)
1 mini avocado
Directions
Preheat oven to 375 degrees.
Heat 1 tbsp olive oil in a skillet over medium heat.
Place patties in skillet and lightly season with burger seasoning. Cook for about 5 minutes per side (or until thermometer reads 165 degrees).
While burgers are cooking, you can prep your sweet potatoes and okra (both on lined baking sheets, tossed in 1 tbsp olive oil each and Mrs. Dash Table Blend Seasoning sprinkled lightly all over).
Bake the sweet potato fries and okra for about 20 minutes.
Once burgers are almost done, scoop the goat cheese on top of two of the burgers (my kids didn't want cheese; you can certainly use the 2oz to spread on all 4 patties).
In the same skillet you cooked the patties in, cook the onion rings down to your liking.
Top the burgers with the onions and slices of avocado.
Plate the sweet potatoes and okra once done. Enjoy!

1 serving: 1 burger patty, 1/2 oz goat cheese, 4-5 onion slices, 1/4 mini avocado, 1/4 of the sweet potato fries, & 5-6 pieces of okra
