Breakfast for Dinner: Bagel Sandwiches

No one turns down breakfast for dinner!

My in-laws were in town, and I had breakfast for dinner to feed them. It was a perfect combination to fill all of the extra bellies, and everyone enjoyed it! The best thing about having breakfast for dinner is that a little goes a long way, and your side dish can be as simple as a bowl of fruit that everyone can share.


I had different options for everyone to choose from: bagel or toast, goat cheese or avocado spread, tomatoes, and bacon. I used the One Mighty Mill Everything Bagels, and I had leftover homemade sourdough for toast. I simply cooked the bacon, toasted all of the bread, and made a small spread for all of the options. Easy!



Breakfast for Dinner: Bagel Sandwiches


Ingredients

  • 1 whole wheat everything bagel

  • 1 mini cup of guacamole (Wholly Guacamole)

  • 1 egg

  • 1 piece of bacon

Directions

  1. Cook your bacon

  2. Cook your egg to your liking (I fried mine using cooking spray instead of butter or oil)

  3. Toast your bagel

  4. Layer it up, and enjoy!
