Banana Bread Protein Muffins

This is my new favorite variation with protein muffins!

My kids LOVE muffins. So I try to make them homemade as much as I can. With the added protein and whole wheat flour, I feel a little better about what I'm giving them! These were a huge hit because honestly, who doesn't love banana bread? I added a sprinkle of sugar on top for the boys' muffins, but you obviously don't have to do the same.


Ingredients

1/3 cup melted coconut oil (or olive oil)

1/2 cup maple syrup

2 eggs

1 cup mashed bananas (about 2 medium bananas)

1/4-1/2 cup almond milk

1 tsp baking soda

1 tsp vanilla extract

pinch of salt

cinnamon to taste

1 3/4 cup whole wheat flour

1 serving protein powder (I used unflavored)


Directions

  1. Mix all wet ingredients.

  2. Add in dry ingredients and stir until well combined. I had to add a little extra almond milk, which is why I left it up to you to do 1/4-1/2 cup.

  3. Evenly distribute the muffin mix in a 12-cup muffin pan (be sure to spray the pay with cooking spray).

  4. Bake at 325 for 20 minutes.
