Balsamic Spaghetti Squash Dinner

The balsamic is a must!

Ingredients

  • 1 spaghetti squash

  • 2 tbsp olive oil

  • 1 sweet onion (diced)

  • 1-2 garlic cloves (minced)

  • 1/4 cup dried cranberries

  • 1/4 cup pecan halves (chopped)

  • 1/2 cup feta cheese

  • 2 tbsp balsamic vinegar

Directions

  1. Poke holes into the spaghetti squash with a fork. Microwave the spaghetti squash for 3-5 minutes. Let the squash cool, cut in half and scoop out the seeds.

  2. Evenly brush half of the olive oil all over the insides of the spaghetti squash. Bake at 350 degrees for roughly 30 minutes (depends on the size of your squash).

  3. Heat the rest of the oil in a pan and sauté the onion, cranberries and pecans until the onions are translucent. Turn off the heat and pour the balsamic in the pan. Stir until well combined.

  4. Take a fork and scrape the spaghetti squash to create the "noodles". Pour the pan mixture directly into the squash and enjoy!
