Bacon Wrapped Okra

This is football season food!

I made these for a football party, and they were a hit! The key is making sure you bake long enough for the okra to soften up completely. Yes, you want the bacon to be crispy, but you definitely want the okra to be soft enough to bite through. I had to test out a couple to get the texture right. The 30-35 minute timeframe is the sweet spot.


Ingredients

  • 12 slices of bacon

  • 12 okra pods

  • toothpicks

Directions

  1. Cook bacon in skillet 1-2 minutes per side. Transfer the bacon to a paper towel lined plate.

  2. Wrap each okra pod with 1 slice of bacon and pin with a toothpick or two.

  3. Place the okra back into the skillet (or in another oven safe dish) and bake at 350 until the bacon is crispy (about 30-35 minutes). I baked these for 15 minutes and kept in the fridge overnight so I could reheat the next day at a party. When I reheated, I baked them at 350 for about 15-20 minutes.

Makes 6 servings (2 pieces = 1 serving)
