On the go breakfast!
Like a frittata, I like making this early in the week to get breakfast made for a few days in advance. Also, the boys will eat them, which makes for a double win! You can easy switch to turkey bacon or add some veggies if you like.
Ingredients
3 slices of bacon (chopped)* 5 eggs 2 tbsp half n half 1/2 cup cheddar cheese (shredded) Salt & Pepper to taste *I baked an entire pack of bacon so that the boys could have breakfast for dinner and have leftover bacon for breakfast the next few days. I only used 3 slices in this recipe. Also, be sure to drain the fat after baking the bacon!
Directions
1. Blend the eggs, half n half, cheese and salt and pepper until fully combined.
2. Pour into 6 cups in a muffin pan.
3. Evenly distribute bacon pieces throughout the 6 muffins (1 slice per 2 muffins).
4. Bake at 350 degrees for 10-15 minutes (until a toothpick can poke in and out cleanly).
